Kook de bietjes tot ze gaar zijn, dit duurt ongeveer een half uur tot drie kwartier. Als je bieten gekookt zijn kun je makkelijk de schil eraf halen. (bewaar het kookwater). Snijd ze in blokjes en doe ze in de blender. Voeg de knoflook, snufje zout, citroen, 10 gram Parmezaan en olijfolie toe. Blend tot je een mooie massa hebt. Is het wat te droog kan je er wat olie bij voegen. Het moet een soort pesto worden. Breng water van de bieten nogmaals aan de kook en kook de tagliatelle beetgaar. Giet de tagliatelle af en voeg de rode bieten pesto toe.
